Miso with a Twist


This is a very healthy soup and meal of the day. Simple and easy to prepare, all you need is eggs, tofu, rice noodle and miso paste. I use "Shiro Miso Paste" which is lighter in color and taste. Just 2 tablespoon of it in small pot of water or stock, enough for 2 people, preparation time just less than 30 min.

Ingredients:-

2-3 Tablespoon Shiro Miso Paste or other miso paste
3-4 cups Chicken stock or just water
1 bundle Rice noodles
1 packet Firm tofu (cut into cubes or chunks)
1 Shallots (make into fried shallots)
1 Tablespoon Rice Vinegar
Salt to taste
Cilantro for garnishing
2 Eggs (beat and make into omellet)

Method:-

1. Boil the water or stock, add the miso paste and stir.
2. Put in rice noodles, cook as instructed. (I would say 2 min max)
3. Add in tofu, salt and rice vinegar to taste. (it should be little salty and little sour) cook for 1 min.
4. Once done, put in a bowl, garnish with fresh cilantro, omellet (cut into any shapes you want) and fried shallots.

Tips for frying shallots: Slice shallots in a ring shape, heat up the vegetable oil in medium. Slowly browing the shallots. Once it is half way to browning, turn off the heat and let it continues browning but not burning.

Light Tofu Sandwich

Honestly, I seldom make sandwiches cos I dont like cold sandwich. Therefore, I am making warm hot sandwich with warm tofu and cheese. I have a one foot long white roll in the freezer for more than a month. That triggers me to make a warm sandwich, quick and easy for lunch. Oh, Gregg loves it.... yummy. Good to eat with a hot warm tomato soup.

Ingredients:-

Shredded Morzarella Cheese - your choice
Romaine Lettuce - handful
Shallot - slice one whole shallot
Firm Tofu - few slices
BBQ sauce & Ketchup
Garlic salt & Black Pepper

Method:-

1. Preheat the oven at 375.
2. Brush olive oil on the both side of the roll (split open) and sprinkle very little garlic salt and ground black pepper on top. Prebake for 2 min. Then take out.
3. Lay some morzarella cheese on the prebake roll, add *sauteed tofu and shallots, add chopped lettuce and cover again with more morzarella cheese on top. Squeeze some ketchup and bbq sauce on top.
4. Bake until the cheese melted, say about 3-5 min. Serve hot.

* To sautee tofu and shallots, just add little oil on a pan and sprinkle some black pepper. Stir for 2-3 min on medium heat.

Tofu Curry



Again, you see I'm doing a curry. A curry can be with anything: meat, chicken, vegetables. This time, since I was serving with other meat dishes, I balanced it out with a vegetarian curry.


Ingredients:-
1 can Coconut Milk
2 tablespoon Yellow Curry Paste (Thailand)
1/2 cup Chopped Onions
2 stalks smashed lemongrass
1 tablespoon Fish sauce
2 tablespoon Vegetable oil
Salt and Sugar to taste
1 packet Soft Tofu (cut into cubes)
1 bunch Asparagus
1 zuchini (cut into cubes)
few Cherry tomatoes (cut halves)
Methods:-
1. Use a 8" pot or bigger to cook this curry and put medium heat.
2. Caramelised the chopped onions with the vegetable oil.
3. Add in curry paste and lemon grass together, stir fried a little until the oil changes its color to yellow.
4. Add zuchini, asparagus and tomatoes. Stir for a minute or two.
5. Add in the coconut milk, fish sauce and tofu. Let simmer for 2-3 minutes.
6. Add salt and sugar to taste, should be a little sweeter side but maintain the creaminess of the coconut milk. Garnish with cilantro.
